BUMP up the VEGGIES
Back in the middle of October I found that I was a hard time getting
all my veggie servings in. I decided to make an interesting move to my Shakeology shakes, and the move paid off BIG LEAGUE. I tried strawberry shakeology with almond milk, beets, and mixed greens. It
was different than the fruity taste of the frozen shakes I usually make but, I
got two servings of vegetables in and it was good! The beet taste I
think takes a little getting used to for some people, but if you're bold
and struggling to get your veggies in, it is worth the shot.

Also, I attempted to make some Brussels sprouts. I have never cooked them and the only time I tried them, they were covered in cheese and butter. I found a recipe for orange Brussels sprouts where you cook shallots in olive oil for a minute then place halved sprouts down. You then cook for 4 'minutes, put in the juice from an orange then flip the sprouts over for 4 more minutes. Top with roasted walnuts or pecans and some orange zest and you have some tastes sprouts. The recipe calls for sprinkling salt on them but I avoided the salt.
